Back in April 1975, a fire destroyed the Phillips Café on West & 5th. But by June, a new steel building rose in its place—and with it, Winchester’s was born. For nearly 30 years, it was more than a restaurant. It was where stories were told, deals were made, and meals were shared.After closing in 2004, Winchester’s left a real void in Phillips. The doors shut.Locals remembered it, missed it, and wished it back. Eighteen years later, we took that wish to heart and rebuilt it for new chapter.

People thought we were nuts. Two dreamers taking on an abandoned lot and a forgotten name. But the old Phillips Grocery & Café was torn down, and in its place, the new Winchester’s Saloon was built. Fueled by passion (and too many late-night "think tank" sessions), we brought it back to life.
